Method
- Brown the sausage first in whole pieces, then take it out and slice it. Sliced first, it gives up its fat and goes dry.
- Onion and cabbage into that fat, cooked until the cabbage collapses and starts to sweeten. Fifteen minutes, and it is worth every one.
- Potato and stock, then a low simmer until the potato is soft enough to crush against the side of the pot.
- Sausage back in at the end. Vinegar to finish — a fatty pot like this needs acid more than it needs salt.
