Method
- Rinse the noodles under cold running water and keep rubbing them until the water runs clear.
- That rinsing is the entire technique. Starch left on makes them gummy and they stick into a block.
- The dipping sauce is strong and served separately in a small bowl — the noodles are dipped, not dressed.
- Ice in the serving bowl, and eaten immediately while everything is genuinely cold.
