Method

  1. Potato small, parboiled, drained, steamed dry.
  2. Hot pan, real fat, potato in one layer, untouched five minutes.
  3. Onion halfway. Turkey torn and added last — it is cooked and dry already, and every extra minute in the pan makes it worse.
  4. Eggs in wells, lid a minute. A spoon of leftover gravy or cranberry stirred through at the end is what stops a turkey hash tasting like the fourth day of leftovers, which it is.
