Method
- Make the sauce from scratch — butter, flour, milk — rather than a tin. It takes six minutes and it is the whole dish.
- Undercook the pasta by two minutes; it finishes in the oven and mushy noodles are the usual failure.
- Drain the tuna hard and fold it in at the end so it stays in flakes.
- Panko toasted in butter and scattered on for the last ten minutes only, so it stays crisp.
