Method
- Garlic sliced thin, warmed in olive oil until it just turns gold. Brown garlic is bitter and there is no fixing it.
- Tomato in, and let it reduce until it coats a spoon rather than running off it.
- Pasta into the pan wet, with a splash of its water, and tossed hard for a minute so the sauce grips.
- Basil off the heat, parmesan at the table. A pinch of sugar only if the tomatoes were bad; a splash of the pasta water if it tightens.
