Method
- Bruise the thyme and steep it in warm honey syrup for ten minutes, then strain. Woody herbs need heat; soft ones do not.
- Fresh grapefruit, squeezed that day. Bottled grapefruit juice loses its bitterness and the bitterness is the point.
- Soda over ice, syrup and juice in, stirred once.
- A pinch of salt suppresses bitterness selectively, so it makes grapefruit taste sweeter without any more honey.
