easyWhy tonight. Pineapple is the acid and the sweet. Don't bread it into a sponge.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- pork
- pineapple
- soy sauce
- red wine vinegar
- sugar
Good if you have them, fine if you do not: bell pepper.
Method
- Sear the pork hard and take it out. It should never simmer in the sauce or it goes grey and soft.
- The sauce is balanced separately: vinegar, sugar and soy tasted and corrected before anything joins it.
- Pineapple in at the very end and only warmed. Cooked, it goes stringy and floods the pan.
- Everything tossed together for thirty seconds and served immediately.

Why each of these is on the list
What the ingredients are actually doing
- pork
- The forgiving meat. Shoulder takes hours and rewards them, chops take minutes and punish you for one too many, and the fat is the flavor in both cases.
- pineapple
- Sweet and aggressively acidic, and the raw fruit contains an enzyme that breaks down protein — useful in a marinade, ruinous in anything set with gelatin.
- soy sauce
- Salt with a savory backbone, so it seasons and deepens in one move.
- red wine vinegar
- The workhorse acid for anything savory and cooked.
- sugar
- Not just sweetness — it balances acid and bitterness, which is why a sour drink and a tomato sauce both want a little.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
