easyWhy tonight. Corn and a pale bean. Frozen lima if you have it; white beans if not.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- corn
- white beans
- onion
- butter
Good if you have them, fine if you do not: bacon, lime.
Method
- Char the corn in a dry pan first until some kernels blacken, then add the fat.
- Beans warmed through rather than cooked further — they are already soft and they break up easily.
- Butter and onion in between, so the beans are coated rather than sitting in liquid.
- Lime and salt at the end. Corn and beans are both sweet and mild and it needs the acid to be a dish.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- corn
- Sugar that starts turning to starch the moment it is picked, which is why frozen often beats fresh.
- white beans
- Creamy enough to thicken what they are in — mash a ladleful against the side of the pot and the whole dish gains body.
- onion
- The base under most of this library.
- butter
- Flavor and body in the same spoonful.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
