Method

  1. Char the corn in a dry pan first until some kernels are properly black. Frozen corn works and goes in frozen.
  2. Kimchi chopped and fried in butter separately until it darkens, then the two combined.
  3. Butter and kimchi is not a traditional pairing and it works because fat rounds off the acid.
  4. Scallion and sesame at the end, off the heat.
