easyWhy tonight. Gochujang on leftover pork. A fried egg if the pan is already hot.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- pork
- gochujang
- soy sauce
- garlic
- rice
Good if you have them, fine if you do not: sesame oil, scallion.
Method
- Marinate the pork in the gochujang and soy for at least twenty minutes. It is a thick paste and it needs time to get in.
- Sear it hard in one layer and do not move it. The caramelized edge is the dish.
- Sugar in the marinade means it burns fast, so keep the pan hot and the cook short.
- Sesame oil and scallion off the heat, over hot rice, with something cold and sharp on the side.

Why each of these is on the list
What the ingredients are actually doing
- pork
- The forgiving meat. Shoulder takes hours and rewards them, chops take minutes and punish you for one too many, and the fat is the flavor in both cases.
- gochujang
- Fermented chili paste with real sweetness and salt behind the heat, so it seasons three ways at once.
- soy sauce
- Salt with a savory backbone, so it seasons and deepens in one move.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
- rice
- Starch that either steams or fries, and the two want opposite things.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
