Method
- Gochujang whisked with soy and a little oil into a paste before it goes near heat. Dry in a hot pan it catches and burns.
- Sear the chicken first without any sauce, so it browns rather than steams in the glaze.
- Glaze on in the last three minutes only, turning, so it lacquers rather than scorching.
- Sesame oil off the heat and scallion raw. It is sweet as well as hot, so taste before adding sugar.
