Method

  1. Start the potatoes in cold salted water. Dropped into boiling water the outsides blow apart before the centers cook.
  2. Drain and let them steam dry in the hot pan for a minute. Wet potatoes dilute anything you add.
  3. Sour cream in off the heat. Boiled sour cream splits into grain and whey.
  4. Butter, scallion and a lot of black pepper. Potatoes take more salt than any other vegetable on the board.
