Method
- Brown the pork first and take it out. Cabbage into the fat, in a wide pan, and left alone until it catches color.
- Cabbage wants a hot dry pan and patience. Stirred constantly it just goes limp and grey.
- Cider vinegar in while the pan is loud, scraping the base — cabbage and acid belong together and this is the moment.
- Pork back in with cumin, and a lid for two minutes at the end to bring it together.
