easyWhy tonight. Yesterday's pork, today's tortillas. Lime and crunch. Don't sauce it to death.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- pork
- tortillas
- lime
- cabbage
Good if you have them, fine if you do not: cilantro, onion.
Method
- Crisp the leftover pork in a hot dry pan until the edges go dark and brittle. Gently reheated it is just cold pork, warm.
- Cabbage shredded thin and dressed with lime fifteen minutes ahead.
- Char the tortillas dry over a flame until they blister.
- Build shallow, and lime and raw onion at the end. The acid is what makes leftovers taste new.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- SearingGetting a surface hot and dry enough that browning outruns cooking, so the crust arrives before the middle is gone.grey and steaming · pale after five minutes · burnt fond · grey band under the crust
- Building a sourSpirit, citrus and sugar in a fixed geometry, then adjusted for how strong the particular bottle in front of you is.thin and sharp · cloying · spirit disappears · no foam
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.
Published minimums for what is in this
These are published minimums, not doneness preferences and not a verdict about any particular piece of food. Ground meat sits above whole cuts of the same animal because grinding moves the surface through the middle — the species is not the reason.

Why each of these is on the list
What the ingredients are actually doing
- pork
- The forgiving meat. Shoulder takes hours and rewards them, chops take minutes and punish you for one too many, and the fat is the flavor in both cases.
- tortillas
- They want direct heat before they go anywhere near a plate.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- cabbage
- Cheap, keeps for weeks, and completely different raw and cooked.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
