What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- shrimp
- tortillas
- lime
- cabbage
Good if you have them, fine if you do not: cilantro.
Method
- Shrimp dried, salted, and seared hot and fast. Ninety seconds a side in a pan that is genuinely hot.
- Shred the cabbage thin and toss it with lime and salt fifteen minutes ahead. It softens slightly and stops being a garnish.
- Char the tortillas dry over a flame or in a dry pan until they blister. A warm tortilla is a different food from a cold one.
- Build shallow: shrimp, slaw, lime, cilantro. Overfilled tacos tear and the point is that you can pick it up.

Why each of these is on the list
What the ingredients are actually doing
- shrimp
- Cooks in about two minutes and is ruined in three.
- tortillas
- They want direct heat before they go anywhere near a plate.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- cabbage
- Cheap, keeps for weeks, and completely different raw and cooked.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
