Method
- Soak or boil the rice noodles to just done, then rinse cold immediately. That rinse is what keeps them separate.
- Sesame oil, soy and grated garlic whisked cold. None of this sauce goes on the heat — sesame oil turns bitter when cooked.
- Toss while the noodles are still slightly damp so the sauce spreads instead of sitting in a pool.
- Cucumber salted and drained before it goes in, scallion raw at the end.
