Method
- Hot water dough, not cold. Boiling water denatures some of the gluten and gives a tender rather than chewy pancake.
- Roll thin, oil it, scatter scallion, roll into a rope, coil it, then roll flat again.
- That coiling is what makes the layers. Skip it and you have a scallion flatbread.
- Shallow-fry in a decent amount of oil, and press the edges down. Cut into wedges hot.
