What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- pasta
- scallion
- soy sauce
- garlic
Good if you have them, fine if you do not: chili oil.
Method
- Cook the scallions in oil slowly over low heat for fifteen minutes, until they are dark, shrivelled and nearly burnt.
- That long slow frying is the entire recipe. Rushed, you get raw onion in oil and none of the sweetness.
- Soy in at the end and reduced slightly with the fried scallions still in the pan.
- Noodles tossed through with a splash of their water. Keep the crisp scallions for the top.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- pasta
- The sauce finishes on the pasta, not the other way around.
- scallion
- Two ingredients on one stalk.
- soy sauce
- Salt with a savory backbone, so it seasons and deepens in one move.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Chili oil noodles
Pantry heat. Chili flakes in hot oil, soy, garlic, sesame. Toss with noodles. Scallion on top. Don't burn the flakes to bitter.

Cold soy noodles
Cold noodles, a dipping soy. Soba if you have it; spaghetti in a pinch.

Farro or barley. Same fried-rice rules.

Ginger scallion noodles
More ginger than looks sensible, because it fades. Scallion whites cooked, greens raw — they are two different ingredients.
