Method

  1. Grate the cucumber and strain the juice. Muddled cucumber turns bitter and cloudy within minutes.
  2. Tonic rather than soda, so the quinine supplies a bitterness the cucumber has none of.
  3. Smoked salt and lime, and drink it soon — cucumber juice fades to nothing within the hour.
  4. It is the closest a zero-proof drink gets to tasting like a gin and tonic, and it gets close.
