Method
- Cut through the core so the wedges hold together, and cut them thick.
- 220C, oiled and salted, cut faces down, and left alone until the undersides are genuinely dark.
- Mustard and lemon whisked and brushed on after roasting, not before — mustard burns and turns bitter.
- Parmesan over the top in the last five minutes. Cabbage is sweet when it chars and it wants salt against that.
