easyWhy tonight. Wine, fruit, a little wait. Soda last. Don't make it a punch of juice.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- red wine
- orange
- lemon
- apple
Good if you have them, fine if you do not: cognac, soda.
Method
- Chop the fruit and macerate it in a little sugar and brandy for an hour before the wine goes anywhere near it.
- That step is the difference between sangria and wine with fruit in it, and almost everyone skips it.
- Wine in and refrigerated four hours minimum, overnight if you can. It genuinely improves.
- Soda or sparkling water added at the very last moment, in the glass rather than the pitcher, or it is flat by the time anyone drinks it.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- red wine
- Tannin and depth for anything long and savory.
- orange
- Sweeter and rounder than lemon and lime, so it softens rather than sharpens.
- lemon
- Acid you add at the end, not the start.
- apple
- Sweet, acidic and firm, which is a rare combination — it holds its shape in a hot pan and cuts through fat on a cold plate.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Apple and maple, not pie filling. Soda last.
