Method
- Traditionally kidney beans and traditionally Monday, cooked all day beside the washing. Pinto works and cooks faster.
- Sausage browned first, trinity in that fat, bay leaf in early.
- Long, low and slow — two hours minimum, and mash a good ladleful against the pot to make it creamy.
- That mashing is what gives it the texture. Vinegar or hot sauce at the end to cut all that fat.
