What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- prosecco
- berries
Good if you have them, fine if you do not: honey.
Method
- Macerate the berries in honey for twenty minutes first. They release syrup and that syrup is what makes this more than fruit in a glass.
- Fruit and syrup into the glass, prosecco poured over gently at an angle.
- Poured straight down it foams over the fruit and half of it ends up on the table.
- Serve it immediately. The fruit kills the bubbles within a few minutes, which is fine, but only if it is already in someone's hand.

Why each of these is on the list
What the ingredients are actually doing
- prosecco
- Bubbles and light fruit, and it is a top-up rather than a base — poured in early it goes flat before the drink is finished.
- berries
- Acid and sweetness with almost no body, so they want fat or starch beside them.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
