Method

  1. Crush about a third of the berries with a fork and a little honey, and leave them five minutes to bleed.
  2. That syrup is what makes the bowl look and taste like something rather than fruit sitting on dairy.
  3. Fold the crushed fruit through and leave the rest whole on top.
  4. Frozen berries work and in winter work better — thaw them in the bowl and use the liquid they release.
