Method
- Dry the chickpeas and fry them in hot oil until some blister and split. Soft chickpeas in a pocket are a wet filling.
- Tahini let down with lemon and cold water past the point where it seizes, then garlic grated in.
- Salt and drain the cucumber first, so the pocket does not go through at the bottom.
- Warm the pita before you open it. A cold pita tears; a warm one opens.
