Method
- Boil the potato, drain it, and let it steam dry properly.
- Brown a great deal of onion in butter — twenty-five minutes, until it is jammy. This is the flavor of the dish and it cannot be hurried.
- Fold the potato through with a little flour and press it flat into the buttered pan.
- Leave it completely alone until the underside is a real crust, then flip it in pieces. It is all the good part of a pierogi without an evening of pinching dough.
