easyWhy tonight. The open jar of peanut butter. Loosen it with hot water before anything else, and keep the sauce off the heat — sugar burns black in a minute.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- chicken
- peanut butter
- soy sauce
- lime
- garlic
Good if you have them, fine if you do not: ginger.
Method
- Sauce first and separately: peanut butter let down with hot water, then soy, lime, garlic and ginger, whisked to pourable.
- The chicken is a dry-heat job — hot pan or hot grill, hard color, no sauce anywhere near the heat.
- Sugar in the sauce means it burns black in about a minute if you glaze it on. Serve it alongside instead.
- Lime over the chicken, sauce in a bowl for dipping. Keeping them apart is what makes it satay rather than stew.

Why each of these is on the list
What the ingredients are actually doing
- chicken
- Two different foods depending on the cut.
- peanut butter
- Fat, salt and body all at once, which is why it thickens a sauce as it flavors it.
- soy sauce
- Salt with a savory backbone, so it seasons and deepens in one move.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
