easyWhy tonight. Loosen peanut butter with hot water first.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- rice noodles
- peanut butter
- lime
- soy sauce
Good if you have them, fine if you do not: chili flakes.
Method
- Let the peanut butter down with hot water first until pourable, then lime and soy. In the other order it seizes into gravel.
- Rice noodles cooked to just done and rinsed cold, so they do not carry on softening in a warm sauce.
- Sauce them just before serving. Peanut sauce sets as it cools and a bowl dressed early is a solid block.
- Lime again at the table and chili flakes. Peanut is heavy and the acid is what keeps it moving.

Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.

The technique underneath this

Why each of these is on the list
What the ingredients are actually doing
- rice noodles
- They keep cooking in whatever they sit in, so they come out of the water early and go into the sauce underdone.
- peanut butter
- Fat, salt and body all at once, which is why it thickens a sauce as it flavors it.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- soy sauce
- Salt with a savory backbone, so it seasons and deepens in one move.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
