easyWhy tonight. Fried-ish eggplant into tomato. Ricotta salata is traditional; ricotta at the table works.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- pasta
- eggplant
- tomato
- ricotta
Good if you have them, fine if you do not: basil.
Method
- Salt and drain the eggplant, then fry it separately until genuinely dark. Eggplant cooked in the sauce goes slimy.
- Tomato cooked down hard on its own, so it is a sauce rather than a liquid.
- Eggplant folded in at the end, not simmered in, so it keeps its texture.
- Ricotta salata traditionally; fresh ricotta in spoonfuls off the heat works. Basil torn at the table.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- pasta
- The sauce finishes on the pasta, not the other way around.
- eggplant
- A sponge, and that is the whole problem and the whole opportunity.
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- ricotta
- Mild, milky and wet. Drain it if it is going into anything baked, season it hard if it is going on anything — unsalted ricotta tastes like nothing, which is why so many people think they dislike it.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
