Method
- Salt the bird a day ahead if you can, uncovered in the fridge, and rub the paprika into the oil rather than onto dry skin.
- Paprika burns readily, so a moderate oven and not a hot one, breast up, on a rack over the potatoes if you have them.
- Baste once, halfway, with the pan fat.
