Method
- The onions are the dish. Slice a great many thin and fry them in a lot of oil until genuinely dark brown and crisp — thirty minutes, and the last five decide it.
- Lift half out to drain and keep them for the top.
- Lentils cooked until nearly done, then rice and measured water in with the remaining onions, lid on, low, until the rice is done.
- Rest ten minutes, fork through, and the crisp onions over the top. Yogurt on the side.
