Method
- Cook the oats in milk rather than water, on low, stirred. Milk scorches, so keep the heat down and keep moving.
- Salt the pot at the start. Unsalted oats taste of nothing and no amount of maple later fixes it.
- Maple off the heat. Simmered into the pot it loses its own flavor and becomes generic sweetness.
- A pat of butter stirred in at the end. Oats are starch and water, and the fat is what gives them body.
