What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- yogurt
- maple
- oats
- apple
Good if you have them, fine if you do not: cinnamon.
Method
- Toast the oats dry in a pan until they smell nutty, three or four minutes, and let them cool before they go on.
- Raw oats on yogurt go soft and slimy; toasted oats stay crunchy for the length of a breakfast.
- Grate the apple in rather than slicing, so it releases juice into the yogurt.
- Maple over the top last, and cinnamon. Salt on this bowl too — it always improves it.

Why each of these is on the list
What the ingredients are actually doing
- yogurt
- Acid and creaminess together, which is why it works as a sauce with no cooking at all.
- maple
- Sweetness with a mineral, slightly smoky edge that sugar does not have.
- oats
- Starch that thickens whatever it is in.
- apple
- Sweet, acidic and firm, which is a rare combination — it holds its shape in a hot pan and cuts through fat on a cold plate.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Apple yogurt
Sliced apple, yogurt, a thread of honey. Cinnamon if you want pie. It is breakfast, not a parfait project.
Shares oats, maple
Maple oats
Maple in the pot, milk, oats. Butter if you want it round. A pinch of salt. Don't make candy porridge.
