Method
- Brown the chicken skin down and take it out. Onion in that fat, cooked slowly until sweet.
- Cumin bloomed, then the chicken back with the olives and half the lemon, and just enough liquid to come up the sides.
- Lid ajar, low, forty minutes. It is done when the meat gives without argument.
- The rest of the lemon raw at the end. Cooked lemon gives depth and raw lemon gives brightness, and the dish wants both.
