Method
- Crush the berries with the honey and leave them fifteen minutes to bleed. That syrup is the whole drink.
- Frozen berries work and in winter work better — they release more juice than fresh ones do.
- Grated ginger squeezed through your fingers, then lemon, then strained over ice.
- Soda last. Berries alone are sweet and one-note; the ginger is what gives it length.
