Method
- Boil the beans in well-salted water for four minutes, then straight into cold water. That shock is what keeps them green.
- Dry them properly. Wet beans dilute the dressing and it slides off.
- Mustard whisked with the vinegar first, then oil in a thin stream — in that order it emulsifies, in any other it splits.
- Shallot soaked in the vinegar ten minutes ahead to lose its raw burn. Dress the beans warm if you can.
