Method
- Slice the potatoes about the thickness of a nickel, on a mandoline if you own one. Do not rinse them — that starch is the thickener.
- Warm the cream with the garlic and nutmeg, and simmer the slices in it for ten minutes before they go in the dish.
- Layer them into a buttered dish with salt between the layers, cream to just below the top.
- Moderate oven, an hour, covered for the first half. Rest it twenty minutes before you cut it or it runs across the plate.
