Method
- A large handful of basil, more than feels reasonable, shaken hard with 2 oz gin, ¾ oz lemon and ¾ oz syrup.
- Shaking bruises it properly. Muddling basil first turns it black and bitter, which is the usual mistake.
- Double-strain over fresh ice so no leaves make it through.
- Drink it soon. It is a brilliant green for about four minutes and a murky one after that, and it tastes best while it is still bright.
