Method
- Small dark lentils that hold their shape — the split ones collapse and this needs texture.
- Cook them in salted water and drain while they still have bite. Overcooked, the salad is a purée.

- Mustard whisked with the vinegar before the oil, always in that order, then carrot and parsley through.
