Method
- Soffritto first: carrot, onion and celery in oil until soft and sweet, which is fifteen minutes of nothing happening and the whole foundation.
- Tomato cooked down before the stock goes in, then farro and beans together.
- Use some of the bean liquid. That starch is what stops minestrone being vegetables floating in water.
- Parmesan rind in the pot if you have one, and good oil poured over each bowl at the table rather than into the pot.
