Method
- Salt the zucchini slices and drain them twenty minutes. Skipping this gives you a watery dish and no amount of baking fixes it.
- Fry or roast the slices first so they color. Layered raw, they release everything into the sauce.
- Tomato cooked down hard and thick before any layering. A thin sauce is the second way this goes wrong.
- Rest it fifteen minutes out of the oven before cutting, or it slides apart on the plate.
