What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- eggs
- milk
- rum
- nutmeg
- sugar
Good if you have them, fine if you do not: bourbon.
Method
- Beat the yolks with the sugar until pale and thick before anything else — that emulsion is the structure.
- Milk and rum stirred in slowly. Adding alcohol fast to eggs can curdle them.
- Whip the whites separately and fold them in at the end for lightness, or leave them out for a denser version.
- Nutmeg grated over each cup. It genuinely improves for a few days in the fridge as the alcohol softens the eggs.
An educational pour, not a reprint of a licensed spec. No allergen or alcohol-safety claim.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- eggs
- The cheapest way to turn a side dish into dinner.
- milk
- Softness and a little sweetness.
- rum
- The widest spirit on the shelf.
- nutmeg
- Warm and slightly medicinal, and grating it fresh is the difference between a note and a whole flavor.
- sugar
- Not just sweetness — it balances acid and bitterness, which is why a sour drink and a tomato sauce both want a little.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Shares eggs, sugar, nutmeg
Brandy nutmeg flip
Whole egg, cognac, sugar, a grating of nutmeg. Dry shake, then ice. Cream if you mean dessert. Don't skip the nutmeg — it is the tell.
Shares rum, sugar
Grog
Rum, lime, sugar and water — the original naval ration and the ancestor of every sour on this list.
Shares rum, sugar
Rum Old Fashioned
Aged rum, sugar, bitters. Rum brings its own sweetness, so use less sugar than you would with whiskey.
Shares rum, sugar
Ti' Punch
Martinique bones: rum, a disk of lime, a little sugar. Build, don't shake. The drink is the rum. Don't turn it into a daiquiri.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
