Method
- Strip the leaves off the stems and stack, roll and slice them thin. The stems never soften and someone will find one.
- Bacon rendered first, onion in the fat, then the greens in with stock to barely cover.
- An hour at least. Collards are not a quick green and a short cook leaves them tough and bitter.
- The pot liquor at the bottom is the best part. Vinegar at the end, and serve the liquid with the greens.
