easyWhy tonight. Sauce, fill, roll, cheese. Leftover chicken is the point.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- chicken
- tortillas
- tomato
- cheddar
- cumin
Good if you have them, fine if you do not: onion, sour cream.
Method
- Warm the tortillas in oil for a few seconds each before filling. Cold tortillas crack and then dissolve in the sauce.
- Cumin bloomed in fat, tomato cooked down hard into a proper sauce rather than a thin liquid.
- Sauce on the base of the dish, rolled enchiladas seam-side down, sauce over the top — but not drowning them.
- Cheese only in the last ten minutes so it melts rather than burning to leather.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- chicken
- Two different foods depending on the cut.
- tortillas
- They want direct heat before they go anywhere near a plate.
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- cheddar
- Sharpness plus melt. Aged cheddar tastes like more and melts like less, so a dish that wants both usually wants a mix — grate it, do not slice it, and take the pan off the heat before it goes in.
- cumin
- Earthy and slightly bitter, and it needs heat to open.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
