Method

  1. Celery juice is salty and mineral on its own, which is why it works in a drink and surprises people.
  2. Blend or muddle the celery with a splash of water, then strain — unstrained it is fibrous and unpleasant.
  3. Honey and lime, then soda over plenty of ice.
  4. A pinch of salt on top of celery's own salinity, which sounds like too much and is exactly right.
