Method

  1. ¾ oz rum, ¾ oz cognac, ¾ oz Cointreau, ½ oz lemon. Shake hard, strain up.
  2. A Sidecar with rum added, and the two spirits are meant to be indistinguishable from one another in the glass.
  3. Cut the Cointreau to ½ oz if your palate is modern. The classic ratio is very sweet.
  4. Lemon peel expressed over the top. No sugar rim.

What the ingredients are actually doing

rum
The widest spirit on the shelf.
cognac
Grape spirit with fruit and oak, which makes it rounder and less spiky than whiskey in the same drink.
cointreau
Clean bitter orange with real sweetness behind it, so it does two jobs in a sour and lets you use less syrup.
lemon
Acid you add at the end, not the start.
