Method
- A whole block of feta, not crumbles, in the middle of a dish with the tomatoes around it and a great deal of olive oil.
- Hot oven until the tomatoes burst and the feta slumps and takes color at the edges. Thirty minutes.
- Garlic in for the last ten only — a whole half hour turns it bitter.
- Crush and stir it all together while it is hot so the cheese and the tomato juice emulsify. That is the sauce; pasta or bread is the delivery.
