easyWhy tonight. Mash the avocado, fold the tuna. Lime and onion so it is not baby food. No mayo needed.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- avocado
- tuna
- lime
- onion
Good if you have them, fine if you do not: cilantro.
Method
- Drain the tuna hard. Avocado is already soft and wet and the two together need nothing else adding water.
- Cube the avocado rather than mashing it, and dress it in lime immediately so it holds its color.
- Fold, do not stir. Two or three passes with a spoon and stop while both are still recognizable.
- Salt at the end and more lime than seems right. Fat mutes acid, and this is nearly all fat.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.
Published minimums for what is in this
These are published minimums, not doneness preferences and not a verdict about any particular piece of food. Ground meat sits above whole cuts of the same animal because grinding moves the surface through the middle — the species is not the reason.

Why each of these is on the list
What the ingredients are actually doing
- avocado
- Fat with no cooking required — it does what butter or cream would do in a dish that has neither.
- tuna
- Canned in oil is a different ingredient from canned in water; the oil is flavor and should go into the dish, not the sink.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- onion
- The base under most of this library.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Guacamole
The avocado that will not last another day. Lime immediately, onion for bite, and stop mashing while there are still lumps.

Causa
Lime mashed potato as a layer, tuna in the middle, avocado on top. Cold. It should taste like lime, not mayo.

Corn cilantro salad
Frozen corn, cilantro, lime, onion. Feta if you have it. Char the corn if the pan is already hot. Don't boil it.

Pico de gallo
No cook. Salt, wait a minute, taste — the tomato has to weep.
Next
Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
