What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- chicken
- worcestershire
- butter
- garlic
Method
- Salt the chicken and dry it, then brown it skin down and take it out.
- Garlic in the fat, then the Worcestershire, which will reduce almost immediately — it is mostly vinegar, anchovy and tamarind and it wants a splash of water behind it.
- Chicken back in, gentle heat, until through.
- Butter swirled in off the heat. Worcestershire is a savory bomb and butter is what makes it into a sauce rather than a marinade.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- Pan sauceTurning what stuck to the pan into a sauce. Two minutes of work at the end of something you already cooked.watery · too salty · greasy · broken · bitter
- Pie doughKeeping butter in visible pieces and gluten underdeveloped, which is the exact opposite of bread and trips everyone once.tough · shrank in the tin · greasy · cracked when rolled · soggy bottom
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.
Published minimums for what is in this
These are published minimums, not doneness preferences and not a verdict about any particular piece of food. Ground meat sits above whole cuts of the same animal because grinding moves the surface through the middle — the species is not the reason.

Why each of these is on the list
What the ingredients are actually doing
- chicken
- Two different foods depending on the cut.
- worcestershire
- Anchovy, tamarind and vinegar pretending to be a condiment.
- butter
- Flavor and body in the same spoonful.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Mushroom wine chicken
Brown everything separately, deglaze hard, and finish with cold butter off the heat. The mushrooms are where the sauce gets its depth.

Anchovy butter toast
Anchovy mashed into soft butter an hour ahead if you can. Nobody will name it, everybody will finish it, and it costs about a pound.

Yesterday's chicken, today's sauce. Don't heat the parsley. Vinegar and garlic do the work.

Cook it, then tell the shelf what you used.
