Method

  1. Blend the feta with the yogurt rather than mashing it. Feta alone will not go smooth and stays claggy.
  2. Yogurt is what makes it spreadable; oil alone makes it greasy.
  3. Lemon in slowly and taste as you go. Feta brands vary enormously in salt and sharpness.
  4. No added salt until the end, and probably none at all. Dill and oil over the top.
